How to xlookup multiple values?

Hi everyone, I am trying to look up values from a pivot table by both Date (top row highlighted blue) and Item # (left column highlighted blue), and return the corresponding value (highlighted yellow) from the pivot table, into my blank table in the first screenshot. I can’t just paste the rows in because the date values skip some days in the pivot table (e.g. between column E-F the date jumps from 9/5 to 9/10).

Actual item #s are redacted but you get the idea

I’ve tried xlookup and index/match but it was sort of confusing so I think I screwed it up. What is the easiest and most economical way to do this?
