I have been attempting to make a project planner like a Gantt chart, But I wanted it to have levels to it, like 1. Project, 2. Tasks, 3. Subtasks. But I find it hard to implement. Any ideas

I have been developing a project manager for about a year... but I keep coming back to one problem.
I generally have 1 big sheet, But I am trying to have a drop-down section to include tasks and sub-tasks. I think it would be helpful to have the Project header to encompass the task information (% completed) As well, I can keep notes in the cells in the overall project and tasks. and I can back reference.
I hope this makes sense on what I'm trying to achieve. Let me know if you have any ideas or if you think it's possible.... currently I have my Projects and tasks on two different sheets.

Essentially, I was given a messy excel document to look after. I don’t have particularly advanced skills and nor do I want to spend too much time on this. So… One sheet lists projects as rows and they all have a reference code. There is a column designated for “action updates” where people overwrite progress each month. Other columns exist for project status, dates etc. My idea was to create another sheet which also lists the projects but acts as an action/change history log. I attempted to have a drop down through grouped cells that would act as a historic list of all changes and action updates around each project. The row with the corresponding project number would act as a “live view”, so using an X look up to display this data on the original sheet. Is there a better way to create something like this? - Is it possible to have sheets displaying specific parts of a 'main' sheet that also update automatically?Sorry, I had to repost because apparently my title wasn't specific enough. basically, I have a project im working on that im using execl for. What I wanna do is make a giant list with Execl and then have multiple sheets displaying specific info from the main list and still have each sheets be able to able to organize/filter the mini list it has. EXAMPLE: MAIN LIST Cake - Vanilla - 2 Cake - Chocolate - 1 Cake - Strawberry - 1 Donut - Vanilla - 1 Donut - Chocolate - 3 Cookie - Chocolate - 2 VANILLA LIST Donut - Vanilla - 1 Cake - Vanilla - 2 CHOCOLATE LIST Cake - Chocolate - 1 Cookie - Chocolate - 2 Donut - Chocolate - 3 STRAWBERRY LIST Cake - Strawberry - 2 kinda like that, but I would also like it if each time i updated the main list, it would automatically update the relevant list. ex: i add 'macaroon - Strawberry - 1' to the main list, and then it automatically shows up in the Strawberry list above 'Cake - Strawberry - 2' I've tried to turn the main list into a table and then made another table on separate sheets, use "= main list ! a1" to copy the data , and use the table filter to show the specific info i want on each one, but when I type new things into the main list, it doesn't update automatically as I would like. - Making a fillable form with dropdowns and sections that can be added and moved easily**SEE ATTACHED IMAGE** I am attempting to improve this spreadsheet. I have a decent amount of experience with Excel but I am unfamiliar with the terminology require to describe the exact functions I am attempting to implement. The function of the sheet is to log various statuses and information pertaining to ladders and their inspection status. Each workbook has a header section and a footer section to diffentiate between clients. The sections that detail the individual ladders need to be moveable / re-order more easily, and also be able to insert a blank ladder section for any new ladders that come into service. The reason excel was selected is for access reasons. All of our clients use excel, but if there is an objectively better tool for the job that is part of the Office suite that people can use via the web or with their Office licence then I will consider that.
